One Horse Open Slaw Burger - comes with slaw, no horse
Season 3, Episode 9: God Rest Ye Merry Gentle-Mannequins
An all beef patty marinated in Worcestershire sauce and topped with melted jalapeno Havarti cheese and homemade coleslaw on a sweet onion bun. Comes with a side of five golden rings of onion and salty kale chips.
First, I started with the onions. Mix some flour and water together to form a batter, and cover some sliced white onion. Fry the battered onions in some canola oil until they brown.
For the kale chips: rip up some freshly washed kale and mix with some olive oil and salt. Throw that on a baking sheet and put it in your oven around 325ish for about 10 or 15 minutes. You just want the kale to get krunchy.
Now the coleslaw was the most intense. Chop up some green and red cabbage and some carrots. That’s the easy part. Now make a homemade mayonnaise (ala Alton Brown’s magical recipe). Mix that mayo with sugar and red wine vinegar and mix it into the veggies with your (clean) hands.
Put the burger meat in a bowl with some Worcestershire, and mix it around until it’s brown and a little wet. Then form your patties and cook them as you normally would. To melt the cheese uniformly, throw your burgers in the oven at about 250 for a few minutes with the cheese on top after cooking.
I definitely used too much Worcestershire, and the burgers were difficult to cook because of it. The sauce started to burn before the burgers were really done, so I cooked them rare, and then kept them in the oven to finish. The marinated meat was also very soft, which contrasted the crunchy coleslaw. The slight bite from the creamy jalapeno Havarti mixed with the crunchy sweetness of the slaw and the robust flavor of the onion bun perfectly.
The kale was definitely a bit too salty, but it worked well with the very sweet coleslaw. The onion rings were basic, but came out delicious.
P.S. That onion ring looks like a sperm (Louise would probably point that out).
